Ingredients:

2 Chicken Thighs/breasts
Shitake Mushroom 80g
Pearl Rice (depends on preference)
a pinch of salt
vegetarian oyster sauce (wan ja shan)
bamboo leaves
Garlic (1/2 a clove)
Olive oil

To cook 20 dumplings

Method:

1. Soak rice in water for 2 hours
2. Wash the bamboo leaves and soak for half an hour
3. Prepare the shitake mushroom by cutting away the stalk and washing it
4. Soak the shitake mushroom for 10 minutes and cut it into slices
5. Prepare the chicken thigh by removing the bone, chicken skin, fats and tendons.
6. Cut chicken into bite-size pieces.
7. Prepare garlic by removing the garlic skin and cutting garlic into tiny bits
8. Heat pan for 3 minutes and add olive oil. Stir fry garlic in pan till it turns golden brown. Add a pinch of salt.
9. Add mushroom slices and chicken into pan and stir fry for 5 minutes
10. Next, add vegetarian oyster sauce (up to own discretion)
11. Continue stir-frying
12. Take out ingredients and set it aside
13. Prepare the dumpling as normal
14. Fill in the ingredients.
15. Immerse in boiling water for an hour
16. Cut strings and serve




Prawn Mee Recipe

Ingredients:

Vegetables, kai lan (amount is solely up to your own discretion)
4 Prawns (deshell if you wish)
Fishcake(amount is solely up to your own discretion)
Chicken breast (amount is solely up to your own discretion)
udon (1 packet)
seaweed(powder form)
Miso paste
500ml of water (to prepare miso soup)

Method:

1 wash vegetables and boil them in boiling water
2 wash prawns and take out the intestines
3 wash fishcake and cut it into slices
4 cut chicken breast, remove fats, tendons or bones.
5 cut chicken to bitesize pieces
6 Cook prawns in boiling water, drain and put into clean bowl
7 Put udon in boiling water and scald, take out after 3 minutes.
8 Boil chicken slices in water for 5 minutes and remove the layer of froth, drain and put chicken into another bowl
9 To prepare miso soup: Place 500ml of water into pan and add 1 tablespoon of miso paste. Wait till it boils
10 Next arrange udon, chicken, fishcake and vegetables in a bowl
11 Pour miso soup into bowl
12 Sprinkle seaweed powder in the middle to give it a nice finish.
